Ingredients:
1 (12 oz) New York Strip Steak (1.5-inch thick, USDA Prime or Choice)
1 tbsp olive oil (or high-smoke-point oil like avocado oil)
1 tbsp unsalted butter
2 garlic cloves, crushed
2 sprigs fresh rosemary or thyme
1 tsp kosher salt (or to taste)
1 tsp freshly ground black pepper
Optional: ½ tsp smoked paprika or steak seasoning
Required Utensils:
A pan with a hefty bottom or a cast-iron skillet
Meat thermometer and tongs
A cutting board and a sharp knife (such as the Chef Knife from Sharp Blades)
Foil made of aluminium (for resting)

Directions
Bring the Steak to Room Temperature:
To guarantee consistent cooking, remove the steak from the refrigerator half an hour before cooking.
Seasonally Generous:
Using a paper towel, pat dry the meat. Add salt, pepper, and any spices to both sides after rubbing with olive oil.
Heat a cast-iron skillet:
Over medium-high heat until it is smoking hot, about two to three minutes.
To sear the steak:
Put it in the pan and cook it for 3–4 minutes on each side, or until it is medium-rare (internal temperature: 130°F/54°C). Use tongs to gently press for the ideal crust.
Add Butter & Aromatics:
Add the butter, garlic, and herbs in the final two minutes. For added flavour, tilt the pan and baste the steak with melted butter.
Before slicing:
Let the steak rest for five minutes on a platter covered with foil. To get the most softness, cut against the grain.
