Ingredients:
1 cup plain yogurt (240g)
2 cups all-purpose flour (250g)
1 cup granulated sugar (200g)
3 large eggs
1/2 cup vegetable oil (120ml)
1 tsp vanilla extract
1 tbsp baking powder
A pinch of salt
Zest of 1 lemon (optional, for added flavor)

Directions
Preheat the Oven:
Set your oven's temperature to 350°F, or 180°C. Line your cake pan with parchment paper or use nonstick spray to grease it.
Combine Wet Ingredients:
Beat the yoghurt, sugar, and eggs in a big bowl until they are smooth. Mix thoroughly after adding the vanilla essence and vegetable oil.
Mix Dry Ingredients:
Sift the flour, baking powder, and salt together in an other bowl. Stirring just until mixed, gradually add the dry ingredients to the wet mixture. Don't mix too much.
Add Lemon Zest (Optional):
For a zesty, fresh taste, fold in the lemon zest if using.
Bake:
Use a spatula to smooth the top of the mixture after pouring it into the prepared cake pan. A toothpick inserted in the centre should come out clean after 35 to 40 minutes of baking.
Cool:
After the cake has cooled in the pan for ten minutes, move it to a wire rack to finish cooling.
